BERTRAM'S GRANDMOTHER'S WELSH COOKIES
Ingredients
5 c. Flour
3 tsp Baking powder
1 tsp Salt
1 3/4 c. Sugar
1 1/2 tsp Nutmeg
1 c. Softened butter
3 x Beaten large eggs plus enough milk to make 1 c. of liquid
16 ounces of Currants

Directions
Preheat electric griddle or large skillet to 350 degrees F.
Lightly grease if necessary. Sift dry ingredients, blend in
butter. Pour in eggs and milk, blend, add in currants until
well-combined. Roll out dough to 1/4" thick on floured surface,
cut out circles with a water glass. Fry till light brown on both sides.

Makes 5-6 dozen cookies, though you'll probably want to double the recipe.

I originally posted this recipe on-line back in the 1990s
and got it from my Welsh grandmother, Elizabeth Edwards Browning,
of Scranton, Pennsylvania. It has since been picked up by
quite a few sites, who don't seem to know who "Bertram" is.
